Day 2 of our 30 day Clean Eating Pledge
For lunch today I decided to try a dish we love, but I have never made. We have always loved trying foods from different cultures. I think some of it stems from growing up in Ohio where Mexican food was Taco Bell, there is more variety now but now when we were young. When we moved to California we tried everything we could get our hands on. Some of our favorites were Korean, Indian, and Thai.
One of our favorite Thai dishes is chicken satay so when I found a clean recipe for it I had to try. It was wonderful, although I did get a bit lazy and didn’t skewer the meat. I was in a bit of a hurry and didn’t have time to soak the skewers, if you have ever used un-soaked skewers before you know what a bad idea it is. Since I didn’t do the skewers I also skipped the coconut. I have never noticed coconut in a traditional chicken satay so I decided to omit it. The dish tasted just as good though served over a bed of brown rice.
