Today for lunch I made Jambalaya. Its always been a favorite of ours ever since we moved to California 15 years ago. There was this wonderful restaurant called the Crocodile Cafe right in the heart of our little downtown Burbank. My husband and I would go there very regularly for their Tortilla Soup and Jambalaya. They unfortunately closed down and we have been on the hunt for a good Jambalaya ever since. No restaurant satisfied our craving for it, but I can honestly say this recipe did! It was a little spicy for the girls but they did try it and like it. I forgot to take a picture, but will definitely do it the next time! I used a recipe from one of my favorite websites 100 days of real food.
For dinner I made a black bean quinoa burger, to be honest it was ok. I love a good black bena burger and have tried many recipes in my search for making one at home. I will keep trying though and let you know when I find one. This time I used this recipe from the Spunky Avacado.
