Today for lunch I made one of my family’s all time favorites, whole chicken in the crock pot. It’s very quick for dish to make. I cut a large onion in half and put it on the bottom of the crock pot, add the whole chicken and spice it by following this recipe from 100 Days of Real Food. Let it cook for 4 hours in the crock pot on low and voila and succulent, juicy chicken every time. Personally I buy the whole organic chickens from Costco. I find that not only is the organic chicken better for me, but they taste much better too. I wish I could share a picture, but truth be told it always falls off the bone when taking it out. Of course that’s part of what makes it so delish.
For dinner we had homemade mac and cheese. The whole recipe with grating the cheese and cooking the noodles only takes about 20 minutes.
I can honestly tell you that Kraft Macaroni and Cheese has got nothing on this. I added peas, carrots, and green beans to it and even the kids loved it. I used a whole wheat elbow macaroni and followed this recipe.
