For lunch today I decided to try a dish we love, but I have never made.\u00a0 We have always loved trying foods from different cultures.\u00a0 I think some of it stems from growing up in Ohio where Mexican food was Taco Bell, there is more variety now but now when we were young.\u00a0 When we moved to California we tried everything we could get our hands on.\u00a0 Some of our favorites were Korean, Indian, and Thai.<\/p>\n
One of our favorite Thai dishes is chicken satay so when I found a clean recipe for it I had to try.\u00a0 It was wonderful, although I did get a bit lazy and didn’t skewer the meat.\u00a0 I was in a bit of a hurry and didn’t have time to soak the skewers, if you have ever used un-soaked skewers before you know what a bad idea it is.\u00a0\u00a0 Since I didn’t do the skewers I also skipped the coconut.\u00a0 I have never noticed coconut in a traditional chicken satay so I decided to omit it.\u00a0 The dish tasted just as good though served over a bed of brown rice.<\/p>\n
